BELINDA
Lunch time at the bakery is always busy, and today was no different. A
line of customers waited as I and two helpers rang up and bagged
orders. We always had an influx of customers between 11am and 1pm
because people would run in and have a pastry for lunch or use their break
to grab cupcakes or cookies for later.

I was very proud of my little shop. We’d only been open for a few
months, but I was lucky enough to find a space in a busy shopping plaza
that had good foot and drive-by traffic. Not to mention, the colorful sign out
front was eye-catching.

Belinda’s Bakery.
I couldn’t believe I owned my own bakery! At times I wanted to pinch
myself to make sure I wasn’t dreaming.
Today was busy as usual, filling orders for new faces and regulars alike.
One of my helpers was a student from the nearby college. The other was
one of my best friends, Rachel. A kind-hearted soul. Too kind for her own
good, if you asked me. At the moment, she was in between jobs, and I had
hired her to help me out part time. When the last customer walked out the
door during the customary lull after one o’clock, the three of us breathed
sighs of relief at the same time and then fell into a fit of giggles.
My student helper lifted off her apron. “That was intense.”
“It was definitely busier than other days,” I agreed. Business was really
picking up.

“I’ll see you tomorrow,” she said, walking toward the back.
She came in for a couple of hours between classes to help out with the
lunch rush.

“Bye. Have a good one,” I returned.
Rachel’s copper-colored skin glistened with sweat, and she wiped the
moisture from her forehead with the back of her hand. “I’m not cut out for
this.”

“I’m glad you’re here anyway. When Royce called in and said he
couldn’t make it, I legit had a moment of panic.”
She slipped an arm around me and squeezed my shoulder. “You know I
got you.”

“And I appreciate it. Although I want you to find a new job, I’m
secretly happy you haven’t yet so that you could help me out.”
“You’re a terrible friend,” she said with amusement.
“I know,” I said with a laugh. “Time to head to the back and prep some
more dough.”

“I’ll straighten up a bit now that things have quieted down.”
“Thank you,” I said appreciatively.

In the back, I checked on José and Richard, who did a lot of the baking
with me. They came in before the store opened to prep, and they were an
invaluable part of my small business.
I immediately started working with them, dusting the counter with flour
and kneading bread. I was back there about half an hour when Rachel
interrupted me.
